Jordan Cohen
Co-founder – Head of Operations & Concept Design

Originally from Paris and passionate about bartending since the age of 17, Jordan began his journey behind the bar in the capital’s most vibrant venues. He quickly became head bartender at Mama Shelter, before expanding his skills in London.
​
Back in Paris, he co-founded Le Bar Paris, a premium mobile bar service, and later joined the Mister Hospitality group in Miami, managing top-tier venues like Marion, El Tucán, and Baoli.
​
His creative flair and ability to design unique cocktail experiences led him to lead the bar programs at Royal Monceau and JK Place, where he specialized in conceptual menus and surprising food-pairing experiences.
​
In 2021, Jordan returned to his beloved island, Saint-Martin, to manage Rainbow Café for two years — a key step in understanding the local clientele and hospitality landscape.
​
Today, alongside Brice, he co-founded JC Bar Company, blending international expertise with island energy.


Brice Decaux
Co-founder – Bar Director & Training Specialist
Also from Paris, Brice grew up immersed in gastronomy and hospitality. His passion for bartending emerged early and took him around the world for over two decades.
​
From Hôtel Crillon in Paris to Roadhouse in London, Mahiki in Dubai, and The Orphanage in Cape Town, Brice built his craft in some of the world’s most exciting cocktail scenes.
​
Over the years, he developed a strong love for Tiki culture and rum, becoming a true specialist in tropical mixology.
​
After settling in Saint-Martin, he led bar programs at Coco Beach, Mimosa Sky Lounge, and Rainbow Café, gaining deep insight into the island’s rhythm, people, and expectations.
​
With Jordan, he co-founded JC Bar Company, to bring together expertise, creativity, and a uniquely Caribbean approach to cocktail experiences.
